Chelsea Jackson graduated from Brigham Young University with a major in English and a minor in editing but admits that "lunch time" is still her favorite subject. She grew up with an incredible mother who could make anything taste delicious-and still make it healthy. Thanks to a doctor as a father, a mother as a health and wellness coach, AND surviving college, Chelsea knows tips and tricks for eating fun and healthy food as a college student. Chelsea now enjoys concocting gluten-free recipes for her best friend and husband who has celiac disease.
Ashley N. Gephart graduated from Utah Valley University with a degree in English--Creative Writing and Theatre Arts. She pursues her dream of telling stories through multiple mediums and methods, including helping others perfect their manuscripts.
